Piper fuligineum (Piperaceae) is a tropical species endemic to South America, present in several Brazilian biomes and rich in essential oils (EO). Therefore, the objective was to evaluate the EO content and yield of different plant structures under different hydrodistillation times and material processing. For this, the extractions were carried out with plant material collected from two locations in the municipality of Tangará da Serra-MT, and were subjected to hydrodistillation in a modified Clevenger-type apparatus, in triplicates, at times of 1, 2, 3 and 4 hours, to determine the ideal time. extraction for each plant part. Yield and content data were subjected to the assumptions of normality and homogeneity of variances. In the analysis, the F test was used for analysis of variance and the Scott-Knott test for the comparison of means. It is noted that the ears have higher yield and EO content in relation to the leaves. As for the comparative analysis of extraction times in leaves, it can be observed that the yield decreases as a function of the increase in the extraction period, and for the ears it is the opposite, increasing the yield with longer extraction times. Comparing the treatments the leaves were submitted (whole, cut and crushed) shows that increasing the contact surface with cutting and crushing increases the yield, but the crushing process is still inferior to cut leaves.
